Recipe of the month: Oatmeal breakfast cookies

These cookies are great as a grab and go breakfast or a healthy snack option. They are sugar, gluten and dairy free! The original recipe is from but I adapted a few things. Here is my version below:


2 ripe bananas, mashed
1/3 Cup organic peanut butter
3/4 Cup unsweetened applesauce
1 tsp. vanilla
1/2 tsp. salt (omit if your peanut butter is salted)
1 tsp. cinnamon
1 1/2 Cup quick oats
1/4 Cup raw pumpkin seeds
1/4 Cup raw sunflower seeds
1/4 Cup cacao nibs
1/4 Cup unsweetened shredded coconut
1/2 Cup chopped walnuts
1/2 Cup raisins
1/4 Cup hemp seeds
2-3 Tbsp. goji berries


Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside. Mix together the bananas, peanut butter, applesauce, vanilla, and cinnamon.  Add in the oats, seeds, nuts, raisins, gojis, cacao nibs and coconut; stir until well combined.

Spoon 2 Tbsp. of the cookie mixture onto the lined baking sheet, leaving an inch or two between each and flatten slightly. Bake for 20-30 minutes and allow to cool slightly.
